Heading out tomorrow for some Doe Pronghorn. I've never hunted pronghorn before, we'll see how it goes. Several people have told me the meat isn't the greatest. What do you all think?

When I get antelope, I use most of the meat for sausage. Brats, polish, summer sausage. The backstraps and the tenderloins I'll use for medallions, otherwise it's all grind for me.
Meat is extremely lean- so sausage and the like make sense.
Makes great sausage.
just had antelope burger last night and it was damn tasty[Beer]
