308 is fine, just make sure of shot placement and bullet selection. I do not recommend a 110gr vmax. Barnes, berger, sierra and hornaday all make good tips for elk feeding.
What everyone has said. 308 is a great round, low recoil but plenty of knockdown power. It won't a be a long range elk slayer, but it will take them down within reason easily. I myself carry one of several calibers for hunting, 7mm mag, 300win or rum, 375h&h and 45/70. All will kill elk easily, and several at distance.
308 Win is fine.
The gun you chose on the other hand isn't the greatest mechanically. If this is something you want to pass along in the future, you need to invest in a higher quality rifle. The extractor claw assembly on the American's is SCAAAAAAAAAAARY crappy. I would recommend a higher end rifle like a 700, 70, x-bolt, A-bolt, or M77 for a step up.
7mm mag vs 308 win is about 10 grains of bullet and 150 fps in favor of the 7 mag. Not enough any elk will feel a difference. The 308 gets it done with about 30 grains less powder. This is with a 175 grain bullet in the 7 mag and 165 grain bullet in the 308. BC is higher with the right bullets for the 7mm but shooting hunting bullets at hunting ranges I think that's a wash. I own and like both but what one can do so can the other.
As to taking a 50 cal elk hunting....I'm not going to say it will make your dick grow and inch....but I'm not going to say it won't either.
Stick with 165ish grain well made bullets and its a good round for elk out to 600yards depending on the shooter. Ive got a 99 savage in 308 that is up to 4 bulls for me with the longest shot being 465yards on a spike and it anchored it.

308 works just fine..... I use a Sierra flavor 168 grainer.... Works everytime.

.308 is more than adequate for all the big game in North America. I like 168gr the best
