well, damn few antelope in our area. (everywhere on the way up, but damn few around once we got there)
My wife got one late in the day (6pm)
no pics, we were hustling to get done by dark.

maybe it's because we had doe tags, but there were a LOT more bucks than does.

we butchered the whole thing.
cut it all up, hung it, ground it, got the steaks, tenderloins and backstrap out
did we do it totally right?

but we made an effort, for our first game.

I've killed 7 or 8 speed goats. We usually just cut them up and label the packages something like "MEAT, antelope, 2011".
Most go into sausage, but we always save the backstraps and a couple of nice looking roasts.
