Saw it in the ML thread! Great looking buck, congrats!
I ended up taking my buck to Big Timber South in Canon City. I thought they did a good job. I wanted to post pictures up in here in case anyone ever stumbles across this thread. Terrible lighting, and I don't have a cool room to put it in, but I am very happy with the results, and especially the price. Took just over a year to get him back.

I have that coyote I recently shot in my freezer. I think I'm going to take sniper7's suggestion and contact Almost Alive Taxidermy and see if I can get this coyote mounted. I don't know if it will still be okay once I froze it, or if I did a good enough job skinning, but I'll take her down there and explore my options. I'll try to remember to update if I get anything done.

I was just at my taxidermist today and got my wife's pronghorn euro already and got my formed picked out for my shoulder mount
He has a couple awesome sandhill cranes in there that looked great. Hoping to drop a few of those this year.
As far as froze you should be fine. I know on Ducks and geese it is good to wrap the bill and feet in wet paper towel before you put them in the freezer. I think for coyote you are good to go, maybe the nose is the only potential area, but I'm really not sure.
