I had a friend ages ago, his mom was Cajun, best damn stuff I have ever had. ....she used beer too. :)
we lost track of each other and haven't had contact for over a decade. Don't miss him as much as his mothers cooking when she invited me over for dinner.[Coffee]
Let's NOT talk about food.. since I'm at work..and starving.. going on hour 12.. fml.
I used Yeungling, because I had just picked up a 12pk and was in the process of drinking my last Modelo Especial while cooking.
Tell you what, there are few things I like better than a good batch of Jambalaya. Lucky for me I had enough left over for 2 more meals. And Jambalaya is a lot like chili...tastes even better the next day!

If you're looking for a good batch of Jambalaya and don't want to spend a bunch of time cooking, get a box of Zatarain's Jambalaya mix; add in a cut up, cooked chicken breast and at least half of a Hillshire Farm smoked sausage. Use beer instead of water, and then jazz it up with some Tony Chachere's Cajun seasoning. Just watch how much Tony's you use, because that stuff has quite a bit of salt in it.
