Probably because without that extra consonant it'd be pronounced with a long "i."

Partially related, my neighbor has a story about the time that his wife sent him to buy groceries. On the list was parsley flakes. He came back all pissed and told her, "I walked up and down the cereal aisle at least ten times!"
