As far as the ham steak question, as long as you serve it to your guest then there?s no limit on the brown.
Now, if you are planning on eating it yourself then obviously you need to draw a line somewhere.

I got ham steak 3-pack and froze two when I got home. I just pulled the last one out of the freezer and it's more brown than pink.
To me, it's just not worth it.
I do throw freezer burned and old stuff out that has been in from 3 months to a year, depending on the the food.
Two things i dont want to read on my headstone, she died from:
1. A rash
2. Dysentery
