I just recently tried the potato gems and would say they are no different than instant mashed potatoes that you buy in the box, but maybe a little saltier. Oh, and they are round little pellets, not flakes. So you have to make sure you stir/add water until they all dissolve. I have used the milk for years, mainly for cooking/baking when I don't have fresh milk at home. I just mix up a small batch and it works great, I can't tell any difference in the finished recipe. The taste is different from fresh milk, when drinking it, but not too bad. I think it is better suited for cooking/baking. All in all, I think they serve the purpose if you are storing food and you need it in an emergency. I think the salt content in most of their stuff is too high to use on a regular basis. I have also tried the Cheesy Broccoli soup mix. Again, very similar to a dried soup package you would find in the store. Tasty, but salty.
ETA: Mixing the milk can be pain in the a**. It's similar to mixing protein powder for a shake, powder is very fine and sticky...and gets everywhere. I would suggest getting one of those cups designed to mix protein shakes, makes clean up a lot easier. If you use a blender, add water first and mix in the powder with a spoon a little before you start the blender.
