I have to wonder about honey powder since archaeologists have found clay pots of honey in Egyptian tombs thousands of years old that was edible and even palatable. Seems like a better idea to buy jars of honey and keep them sealed until needed.
I was going to oven-can some honey, just haven't done it, The hydroscopic properties of the honey make it antibiotic and not susceptible to spoilage. Then I thought the glas gars are fragile and such that it would be hard to be mobile with a bunch of honey. STill might be worth a try to store it when Honey goes on sale in season.
