Default What's Your EDC cooking Knife?

Well, what do you use in the kitchen everyday?

This was all I used, for cooking, in the kitchen for about 18yrs. I cook at least once a day...

A Henkle 8" chef, Henkle 4" paring, Oxo bread knife and my Great Grandfather's fishing knife. The 8" has been re-profiled once and the the paring twice.

In the last couple of years, I started getting into Japanese steel. The Shun 8" chef knife farking rocks. The Mercer Nakiri slices like a fiend.

The Winco veggi chopper is okay but too big. The Russel Green River is excellent for taking down big meat. It's about thirty years old and working on a new handle.

    That's it for the kitchen.

    Whadda ya got?

A friend bought us a Cuisinart set of a butcher knife, paring knife, and small bread knife. Not the best, but the best we've ever had. I'm able to make the straight bladed knives hair cutting sharp so that is nice. If I could get my wife to stop cutting things on plates, that'd be nice.

Lol. I keep my good knife in the closet when I'm not using it so the wife and kids don't screw it up.

Victorinox breaking knife with 14" blade next to a 18 lb pork shoulder if I hit something with it I don't think the hammer sword debate will be an issue for long [/tooth]

My favorite kitchen knife, 8" Chef, freshly sharpened. My neighbors knife below it, I also just sharpened it.

Ah Pook, what's the blade size of your cleaver? Been thinking about getting a cleaver for veggie chopping, maybe this one..
