    I don't know about that, but I can remember buying kikkoman in one gal metal cans and Frank's in one gal glass bottles.

    One of the opened cans of soy got "misplaced" at the back of the wrong shelf, and wasn't discovered for about 2.5 - 3 years.

    It had gotten a fair amount stronger due to some evap, but there was no growth of anything strange, or even leakage from the can. Try as I may to convince momma it was fine to use, even after decanting to a clear glass jar and cutting can top for inspection, I only got to use about 2 cups before she threw it away.

    YMMV, especially in a plastic 5g bucket. ;-)

    ETA: We don't use nearly enough of either of the above to justify buying those quantities any more.

    Well, maybe the soy still...
