Is Texas like Colorado wherein the signs on a location basically mean nothing other than they can ask you to leave should they find out you have a CCW on you?

No, Texas is not like Colorado, they have a legally binding sign format that gives the force of law behind the sign. Don't meet the format and then yes, it's like Colorado in that the signs don't have the force of law.
