I'm (likely) getting sued to replace portions of a subfloor due to dog pee staining them. Looking for a general figure of how much it'll cost me per square foot to have it replaced.

Kilz Primers will cover pet stains on a sub-floor.
It depends on how it is attached and how much. If it is screwed and glued, removal will be as much more more than putting in new.
I sent a note to one of the guys I use. He said $500 for 3 - 4x8 sheets is the least he would get for that. Irving might be able to get you an actual estimate if you give him the total square feet needed.
I'd certainly explore clean and seal over replacement.
My concern is that you end up paying for replacement and then they just use Kilz. I don't know that you're in the position to negotiate a reimbursement for paid receipts. Them having to foot the bill first may mitigate unnecessary expense. I can write up an Xactimate quote, but not for a few days.
