YNAB (You Need A Budget) is going to be a big one, but still requires linking your bank account. That's also a paid program, but I think it's probably worth it.
If you just want to keep track, making a spread sheet in Excel would probably be easy (but not as easy as using Mint or YNAB).
Before you tell me how non-techy you are, designing an Excel spreadsheet is just a few Google searches away. That's how I do it.
