If you had to, could you just use two doors and custom frame it and put install the receiving latch onto the one door, as well as the top and bottom locks? Framing it out shouldn't be too tough (says the guy who won't be doing it).

If I wasn’t a lazy sack, I’d have done that from the get go. I got spoiled several years ago when I installed my first pre-hung door. Ironic - I grew up hanging doors and trimming new homes as a kid with my dad in the days before pre-hung, but the last few times I tried to mortise hinges into raw doors, it looked severely amateur. The framing will be easy; the wall in question is non-weight bearing. Maybe I’ll give up looking for the easy install and just build it. On the bright side, there should be some amusing pics coming in this thread....
I have a full mortising rail kit you're welcome to borrow, if you choose that route.
