I was about to strap on some 'cheap' seat covers for my new to me 2010 Ford Escape. However, I figured I would ask is there any good places in Colorado Springs that will re-cover a seat?

The driver side seat might need a little bit of foam work.

I've used Timeberline Auto Trim, on Stone street North of Fillmore a few times. He almost completely rebuilt the bench seat in my 1990 work truck and I had him repair the foam on a bucket seat in a second truck. I've been pleased with the work and quotes both times.
