I've made jerky every which way. Air dry, sun dry, fan, oven, and dehydrator with heat and fan, it's all good. My first time making jerky in the college was with lean beef strung on a coat hanger. I begged some old nylon stockings from the girls dorm and covered the jerky to keep flies off and air dried it on the balcony. Worked great and the gals had something to talk about when they got home....
