You can also just hang it in a cool dry place on a string. The fan is just moving the air to help.
I personally use dehydrators because they are quick and easy. For storing meat, a $100 dehydrator pays for itself quickly.
I have two 160 liter commercial dehydrators and an 80 liter commercial from Cabelas. I use them for drying a lot of different foods. We forage mushrooms, plums, apples, onions, pears and all kinds of other things. They are a great investment.
