    Default Jerky making

    I always thought you had to use an oven or dehydrator and never knew you would use a box fan and some clean filters (no fiberglass type) to make it.
    I just searched online for
    Box Fan Jerky Alton Brown
    Had seen it on a cooking show lately. Anyone tried it just with a fan before? Seems easier than having to heat it.

    I’ve done it once I used pink salt to cure. It had a lot of fight to it when done super tough

    A fun process of you have time is making biltong.

    I've made jerky every which way. Air dry, sun dry, fan, oven, and dehydrator with heat and fan, it's all good. My first time making jerky in the college was with lean beef strung on a coat hanger. I begged some old nylon stockings from the girls dorm and covered the jerky to keep flies off and air dried it on the balcony. Worked great and the gals had something to talk about when they got home....

    You can also just hang it in a cool dry place on a string. The fan is just moving the air to help.
    I personally use dehydrators because they are quick and easy. For storing meat, a $100 dehydrator pays for itself quickly.
    I have two 160 liter commercial dehydrators and an 80 liter commercial from Cabelas. I use them for drying a lot of different foods. We forage mushrooms, plums, apples, onions, pears and all kinds of other things. They are a great investment.

    Cookie cooling racks and a fan....and two days. Boom. That?s it.
    I put the racks over a cookie sheet with a layer of plastic wrap and paper towels to catch the drips.
    I use soy sauce, worshtishier sauce, some brown sugar, pepper and a dash of liquid smoke.
    Mix it all in a gallon ziplock, then add stripes of beef bulgogi meat and let sit over night. Lay it on the racks and put the fan on. Sometimes add red pepper flakes for some heat.
    Good snack and much cheaper than the store bought.

    I've made jerky a few different ways and think a dehydrator is money well spent if you can afford one. Do yourself a favor and get an Excalibur.
