At that rate, it would be cheaper to hire a lawyer at their hourly rate to do it. Once you have the hot water heater in place, it should only take 30 minutes or less to get it all connected. If you can find a lawyer that will wrench/sweat pipes for $475 an hour then you will save a boatload of $$ over Applewood and the likes of them.
