    What is the name of the style of the knives in that last picture? I remember my dad having some old knife just like those ones in the picture. It even had that little chunk out of the bottom of the blade just above the handle. What are those for?

    Good knives are not cheap but neither do you have to break the bank for a good knife. Good steel,ease of sharpening,and holding an edge are my criteria.
