    Fresh roasted coffee emits a number of gasses, particularly CO2, hence the valves on bags. Is the coffee pre-staled to prevent that?

    Maybe that works OK for espresso? I fresh grind and drip brew.

    Ha! We buy coffee at Costco or wherever in town and our car smells like coffee on the way up here. Stuff without valves blow up like balloons.

    Just guessing, but the super fine espresso grinds like Illy are probably not off gassing as much? Plus it's in a tin.
