Doing the standard flour S&P ? Last time i did a roast (for stew) used some smoked hungarian paprika.
Elk, antelope sound real good. Our meat processing guy said he did up some Moose roast. Said it tops all other game meat for eating. Anyone have a moose tag?

Regular paprika, little flour to thicken and prep for gravy about 30 mins before ready to serve.
Good moose roast would cause stiffies all around.
Starting to get some good smells now. Ready to serve about one hour.
