Doing the standard flour S&P ? Last time i did a roast (for stew) used some smoked hungarian paprika.

Elk, antelope sound real good. Our meat processing guy said he did up some Moose roast. Said it tops all other game meat for eating. Anyone have a moose tag?

Regular paprika, little flour to thicken and prep for gravy about 30 mins before ready to serve.

Good moose roast would cause stiffies all around.

How about a dinner suggestion, jambalaya with that sausage. Did some 3 mights ago with fresh smoked bratwurst. Or the usual breakfast burritos with it, smother with chili verde AND some diced chilis wrapped inside, oh yeah.
