Santiago's burritos fresh from the drive thru are poop.... let em sit for 20min for the cheese to melt and the sauce get in all the nooks and crannies and they are very different and great tasting burritos then.
That said... every Sunday the OldWest Bbq place in castle rock gets my burrito money...

There was a place called Alexander's with two locations for short while, Boulder & Denver. Can't say it was my style of eatery but I really liked some of their burritos & the green chili was darn good too. Hmmmm... green chili. I always snicker when Colorado natives go elsewhere & forget Colorado style green chili is truly unique & order something with it. Most folks I've seen politely suffer through the meal they are given & then b*tch later in private.

Rumor has it that Colorado style green chili originated in &/or near Pueblo. If anyone has alternate or corroborating information, I'd like to know it.
Yep, now the Bull & Bush has made this weekend's agenda & Santiagos has been scratched. The sequitur here is that they have wonderful green chili.
Grew up with mashed potatoes and green chili on holidays with my buddies family, i miss it.

Down here it's red or green sauce, the green is not bad, the red is more an enchilada sauce.. Go down to the valley (Phenis/ Scottsdale area) you get diced green chilis. CA has green but it's more of a tomatillio style.
Even weirder.......Having a smoker going. I ask if they like smoked foods, Umm not really, we like bbq. You do realize bbq'd meats are done on a smoker. Look of puzzlement.

Yep, I'm a smoked & rubbed kinda girl & when done well, I'm satisfied & can take or leave any accompanying sauces.
