I suggest a Volvo with a 5.0 dropped into it. RWD and the Ford 5.0 drops right in.

All you need is lots of expendable cash, a shitload of free time, a great place to work on it with lots of tools and a lift, and get started.
Oh, and lots of wiring diagnostic, and fabrication skills along with the plasma cutter, welders, and torch will be quite helpful as well.

No...if you have time, you can get it done before you're crappin in your pants at the dinner table. You did mention reliability with the old look. That's the way to do it.

I've been trying to do that with the truck. It's taken several years with lots of life interruption and it's still not done yet....and I do have access to all the stuff I mentioned.
Restorations can be incredibly hard and very expensive it you want to put it back to stock. There is no difference if you want to upgrade them and make them more "modern" with the drivetrain and systems available in more recent year models, and keep the old look at the same time. A lot is involved, lots of fabricating is necessary.
