I make those every once & a while. When i forgot to let some bread sit out overnight for freedom toast the next morning. Or i've had eggs in some form the day before. So that's a combo of both in a convenient package .

I do mix in a little green chili olive oil with the butter for that slight kick to open the eyes.

I've gotten to the point I can hardly eat a fried egg anymore without resting it atop a warm corn tortilla and smothering it with Green and some cheese.
