    I picked up some ground elk for jerky sticks from the butcher. Hate paying big bucks for game... I'd like to start hunting here in CO but it's just me and my wife and I don't even have a freezer.

    I do a skirt steak, marinade over night, with lemon, onions, garlic, seasonings. Then sear on grill or under broiler for 3-4 min. Put remaining marinade in a small pot and bring to boil. Turn down to simmer and cook until you have a nice reduction and onions are tender 5-10 min.

    The elk is marinating in the fridge and the beef is still defrosting. I over-froze it before slicing...
