Easy as pie. I use this as a way to clean out the fridge.
Brown up ground turkey. Chop up onions and toss in the pot, sautee them with the meat. Dump in a bunch of chili beans, black beans and kidney beans. Add chopped tomatoes. Add chili spice and dig out any leftover poultry you may have in the fridge. Tear into bite-sized bits, toss in the pot. If you like a little extra heat, add in peppers. If you have any spare bell peppers, feel free to add those. Cook on medium-low heat, stirring occcasionally, for at least an hour. If it's too thick, I add more tomatoes. It's my philosophy that you can't have too much meat or too many beans.
I serve this with fresh crusty whole wheat bread and shredded cheese.
It's a very forgiving recipe; you can add or take away ingredients at will, and it still makes a nice spicy dish. I make up loads so we have leftovers and still can freeze some for later.

It has come to our attention in the recent months that our youngest cat will not tolerate the existence of any other cats (aside from his buddy), so no...we'll have to pass on the opportunity.
We keep indoor-only kitties. Too dangerous, what with teenage drivers, fox, coyotes and racoons all laying claim to our yard....
