    Allways looking for a new way -minus the alcohol...

    I use
    * "1 gallon" Lipton Tea bags (like the large family sized bags - specifically intended to make 1 gallon of tea... I get 'em @ Sams Club)
    * 11/3 cup sugar
    * Heavy pinch of baking soda (helps darken the tea & neutralizes the tannin in the tea which takes the bitterness out)
    * 3/4 gallon water
    * ice - enough to fill remainder of 1 gallon pitcher

    Heat 1/2 gallon of water to just short of a boil, remove from heat.

    Drop in baking soda followed by the teabag.

    Allow to steep for at least 1/2 hour, pour into pitcher. If you choose to squeeze out the teabag (not recommended as this adds to bitterness), don't squeeze it much!

    Put remaining 1/4 gallon of water into pot (might as well use the same one you steeped the tea in),

    Add sugar & heat, stirring until sugar is fully desolved (this is known as a "simple syrup").

    Pour into pitcher with steeped tea.

    Add ice to top of pitcher to quickly cool the mixture. You can stir the mixture, but usually the pouring of the simple syrup blends it well enough.

    Chill. Serve.
