Default On the lighter side of self sufficiency...

So just finished up a little canning over the weekend. Using raw pack on both, water canner on peaches, pressure canning green beans.

    49 quarts of Green beans
17 quarts of peaches (would have been more but we kept eating them

I LOVE green beans and peaches!
Looking for the next sale on carrots & tomatoes...

That's great. I've been buying jars and have a date with my buddy's grandmother who can's everything. They have a cabin the woods and are totally off the grid! She's going to be my teacher this summer. I just found out you can asks growers if you can pick there fields for leftovers after harvest season. My buddy came back with 100's of peaches that were still decent for canning last fall.

We need to get some beans going. Our crop here at the house was late due to the cold so late.

I see I may want to have another canning class in the fall.

Hey jerrymrc, let me know when you do. I am interested in moving on to meats and the like and would like to see how you do it. I know it shouldn't be much different than pressure canning, but it would be good to get to know some like minded individuals as well.

    That is a great price!

We opened a jar of the green beans with dinner tonight, and they were soooo good!
