we had 2 before 7:30 then the other not-so-sharp shooters took till 4:56 to get theirs... Geesh.....needless we are processing this morning and

Good job but I must ask why the hell would you butcher it the next day???
The longer you let it hang the better the meat.... The meat you buy in a grocery store hangs for 14 days. That is not possible to do when you hang it in a barn but hell I sometimes if the weather allows can get up to 7 days.

wtg allI spent my weekend shooting coyotes, and chasing trespassing antelope hunters off the ranch.
Ya know I read a study on wild game hanging vs. domestic.. the colleges involved stated that wild game does not age like domestic due to the fact it doesn't have the same characteristics ie: hormones, fat, enzymes, etc. to cause the meat to break down, like domestic. And animals killed in warmer times will not age properly, in fact they may grow bacteria that is harmful. (Clemson University)
anyway we eat the backstraps and tenderloins and usually grind the rest as burger, and sausage...so no need to
On another note my buddy got his cow moose Fri night,, sorta glad and sad I missed it... glad didn't have to help packing her out,, but his boys were there so they need the exercise.. sad though cause Moose hunting is fun,,,
