My current elephant becomes a constellation next week. What is normally a two month planning cycle is now a 2 week frenzied flurry of freak-out.

We get a new elephant later this month. Hopefully he's going to be an OK boss.

With the 4 July time fast approaching, there are parades, rodeos, BBQs, and other craziness still happening.

While you're dicking around, i'm working. Cooked down the carcasses of 2 roaster i did up on the smoker. Whip up a nice roux, dropped broth and shredded cluck in along with a few mild ones from the wax temple Nothing special but works for us.


Doing up a meatball po'boy parmesan on the smoker later.
