I understand that FMJs aren't allowed for hunting in Colorado, but what about open tip match ammo for coyotes and prairie dogs? Are there similar restrictions in Wyoming?

No. those are considered varmints and you can use any type of bullet for Coyote's and P'dogs. I personally wouldn't recommend FMJ though.
I use match bullets for light game up to antelope. They do cause a lot of damage, but are very accurate.
I used some 77gr OTM on P dogs today. about 4-5 of em crawled back in their holes after being shot once. Other dropped depending on where they were hit. Vmax or varmint grenades would be better but w/e.
Your main issue with using match bullets is they are not designed to act like hollow point hunting ammunition. Probably will fragment depending, but will not expand much if at all.
6.8 OTM rounds wreak absolute havoc on whitetails!
You want to be a martyr, I want to make you one.
If the manufacturer does not label them as expanding bullets, then they are not legal for big game in Colorado.
