I looked around on other forums to see what people were saying about this caliber and it seems like people either love it, or hate it. Kind of like the .40 S&W of the rifle world.

"There are no finger prints under water."
What would the pros/cons of this caliber be when compared head to head with 300 blackout?
300blk has lots of factory ammo choices, and can be shot suppressed. 25-45 hits a lot harder, shoots flatter and farther, and is easier to make & load yourself.
I think SRC pursued military use as well, but hunting is probably the home run.
What barrel length are you using to achieve these velocities? I've been looking for a new caliber for the wife AR to hunting with, and I may have a few extra bullets laying around in .25 caliber.
I may have been one of the people posting in the other forums as I've recently seen this pop up. The 6.8 SPC seems to be well liked by AR15 hunters of medium game. One interesting wildcat round that has recently been picked up by two manufactures and is gaining in popularity is the .277 Wolverine. The .277 WLV is pushing 98% energy as a 6.8 SPC at 250 yards with factory loads. You get that performance and all you need is a barrel replacement to shoot it. You utilize 5.56 magazines and bolt.
To clarify, with 6.8 SPC you need a different bolt and magazines, and mag capacity is reduced. The 277 Wolverine is interesting because it follows similar design constraints as 300blk and 25-45 for using the same bolt & magazine (to the same capacity) as 5.56. It is also in the same muzzle energy ballpark as 6.8 and 25-45. I went with 25-45 because of the SAAMI certification, really. The 25-45 also stays supersonic roughly 100y further, but I wouldn't recommend hunting with either one at 900 yards anyway.
